I made baked turkey for dinner. Some of it will be sandwiches. The rest will be turkey pot pies with cream cheese crusts, for the freezer............It was actually the Christmas turkey that I had been putting off cooking.....I sometimes procrastinate a little.

Simple. The pie sauce is basically a French cream sauce(butter, flour, broth, heavy cream at the end) and whatever meat, vegetables(fresh cooked or leftovers) you have. Everything you put in the sauce is cooked so when you bake it you are merely heating the filling and baking the crust. Put in small oven dishes and top with a crust of some kind: reg. pie crust with some cream cheese, or a pastry crust, mashed potatoes(Shepard's pie), biscuits, etc. This is free-for-all cooking....Wonderful rich bubbly smell will bring the eaters, various animals(some may be actual pets), and all.
My mother didn't like pot pies. But she liked my sauce on baked potatoes. It is rich. I've been wondering how it would go with crescent roll rollups? Or as hand pies.
