    Me, too. I'm baking bread. Had to add a bunch of malt to my flour because it doesn't have a high falling number and high protein. In the future I will probably use Spelt or some alternative flour. I did add 10% whole wheat to this recipe, with 15% prefermented flour. It's only an estimate because I scale my recipe with cups and teaspoons. So, the added malt added a punch to my leavening power, but I'm lacking a good tear in the oven for the prized "ear" due to mixing, handling, and bulk fermentation requirements that I haven't dialed in.

    It's 100% liquid levain, no instant yeast added. Hand mixed, and around 36 hours for the entire recipe.

    Nevermind, got some good 'grigne' going on. Bulk fermentation went too long. I didn't include the malt in the unleavened preferment [baker's secret, shh] I also didn't add enough water and the 12-hour fridge proof could be pushed to around 18 hours, because I baked it at a 10 and it's a little quick.
