    Have you tried flattening them a little before baking? Could also be overwhipping too much air into them when mixing. They also will flatten better when baked at room temp. Used to work at a bakery and in culinary for many years. :emoji_upside_down:

    May be a bit tricky w/ cookie cutter style cookies, proceed w/ caution lol. A good trick to flattening is to put a sheet of parchment paper over the cookies and take another sheet pan and set it on top of the parchment paper and try to hit down onto it evenly across with your hands a couple of good smacks. I'd start out easy until you get a feel for it or they will be too smashed when you peel the paper back lol. Good luck!
