Click on the export button, it will give you a data dump in your log.
Copy/paste to a text file.
Panda Crazy:

Select Jobs tab
Select Export tab
Select Export To File
Copy to wherever you are saving.
HIT Database Mk. II:

Click Create Backup.
It'll save a hitdb_{today's date}.bak file in your default downloads folder.
Hit Finder:

Click on the Block List/Include List button and then Export.
HitScraper:

Click on Settings then Utilities and then Export.
Hit Monitor:

Click Export. That will save the txt to your clipboard.
Paste it to text editor of choice and save it with a name you'll remember.

TurkMaster:

Click the gear and then the three vertical dots next to Export.
Copy the entire text that is shown there and save it as a .txt file.
Finally, your best practices after backing up? Don't keep all backup locally saved! Sync it to cloud storage, or use a web browser based E-mail (like Gmail) and mail a copy to yourself. Or put it on a USB stick. Just make sure you keep the data available somewhere else in case your computer stops working.
