I had crawdads in downtown new orleans in a gumbo style dish with alligator as well. It was probably not very authentic and moreso just a tourist thing. It was just the meat, so didn't require any disassembling.

However, I also had crawdads at a buffet and they were whole. I had to google how to eat them.

Nothing special tbh. Lots of work for little meat. - like crab legs but very much less rewarding. Crab legs are stellar.
