    Read and commit to memory New Complete Techniques and La Varenne Pratique and you'll be close enough that no one outside of a Michelin starred restaurant will complain.

    Alternatively, sous vide any cut of meat, finish the meat by searing in a pan with Avocado oil until browned, remove from pan, add butter and sauté garlic and chives, deglaze with an appropriate wine, and pour this pan sauce on the finished meat.

    This was totally not in reference to earnings. My PE is currently sitting at $2.88. I've only worked a few hits today, though. I bet your abysmal looks better than my abysmal. Tradesies? :D

    @Tracy Wethington My first attempt at sourdough is about to go into the oven! The recipe I used made two loaves, so I'm trying a slower proof overnight in the fridge for the second loaf, just to try it out. It was quite a process, and the dough was way looser and wetter than I expected. I see a few bubbles in the dough, but I'm really not expecting greatness :emoji_joy:

    YAY!! I'm excited for you! I love sourdough bread. :D I can't wait to see how it turned out! A wetter dough can produce an open crumb and a lighter bread. I'm sure it will be great :emoji_hugging:

    It's fine. It's mostly a recipe book, but the recipes are mostly good. I like Dave Kelly's Great Meat more as a book that gives a more concise overview of cooking meat, and the layout is more coherent, although you get far fewer recipes.

    We have Great Meat and like it. Also I would recommend a cheap electric meat thermometer. Ours has all of the temperatures for various meats and done-ness listed on it and it came with a little print out we have hanging on the fridge. My husband is the cook (and former restaurant chef) and can tell when things are done and what level they are - for me the meat thermometer makes it fool proof :)
