    Ohhh, I'm a gas range lover. What I do is put my cast iron on and let it heat up a bit at like 2/3 (out of 6 + hi) while I make my batter, crank it up to more like 3.5ish/4 when I start dropping pancake-o batter in, normally I fiddle it a bit up and down while I'm cooking, so I don't overheat the butter but also get a nice sizzle, and I put my pancakes on a plate that I keep in the oven at 170 to keep those bbs warm while I make the rest :) There's a solid mid-ground between heat that is too low and won't give you optimal lift/golden bits and rushing them and giving them cronchy outsides with soggy middles- but once you get it nailed down, you'll be making pro-level pancakes half asleep in no time!

    I'm sure they were great, tho! Pancakes are pretty tasty no matter what:emoji_grin:

    So I was gonna make stuffed peppers for dinner tonight, but I forgot I had this big piece of chicken I had to cook. I've only ever used beef/sausage for peppers like that, is it possible to make them with chicken ? @Hummingbirdee or anyone else with expertise in the department.

    omfg yes, ive made chicken breast stuffed peppers many times, the last few times i added a tiny bit of taco seasoning and ive not gone back to beef for the peppers.

    OH! OH! YES! I use chicken for sauce and stuff like stuffed peppers all the time! When I do it, I usually cook the chicken so I can shred it (poach it or cook it tomato sauce or whatnot) and blitz it up with my immersion blender in tomato sauce or I slice it up before I cook it and chuck it in the food processor to make it ground chicken. Or just shredding it and adding it to whatever sauce you use for the stuffed peppers will work great, too :)

    I have a friend who doesn't eat beef/pork, so I've made everything possible with chicken. Chicken parm stuffed peppers are aces, too! :)
