but it's certainly worth the time it takes to write for the good review rating farm

seriously though, the irony of a tenured professor, who easily makes 6 figures a year, having his students pay out of their own pockets to fund the mturk projects for homework on top of tuition and whatever else puts them deep into student loan debt, while championing for mturk to pay higher wages somehow (as well as designing his class lectures specifically around that one paper pushing for higher wages), cannot be understated

His go-to for knives are Henckels and Wusthofs - we have had a LOT of those in our kitchen over 20 years. We definitely had to come to a agreement between looks and functionality - but we've found both Henckels and Wusthof's look pretty beautiful and serve as amazing chefs knives.

If you want to filet ---- husband usually uses either a Wusthof or a Bass Pro filet knife.

For chopping in the kitchen (santoku medium weight) knives we'd recommend the Wusthof 7 inch:

Not at all. I will get back to this but a knife is a very personal thing. How you want to use it, what you use it for, how it fits in your hand, how much you like using it after 30 minuets as opposed to right away, how the upkeep is, all of these things you really cannot know about a knife until owning it.

I will be honest that I mostly use a chef's knife. I don't do a whole lot of fine breaking down of smaller raw cuts of meat or fish at my restaurant. We are north of 5 million in sales every year so we don't do much on a small scale. With vegetables I am more used to and for that reason faster with a chef's knife personally but I do love the feel of a santoku and love to use one at home when I want more precision over speeeeeeed.

I don't want to push things I haven't personally used and I don't know your budget so I will say that the two santoku I have personally liked the most under $100 are a wusthof 5in. and a global 7 in. if you were willing to go a little higher the best period I have used is a masahiro 7" but that will run you between $100 and $150.

With this being said the absolute most importent thing when buying a knife is return policy from where you buy it. do your research and pick one you feel good about and order it from somewhere where you can return it. The best knife in the entire world for one person you may not like at all! be willing to return a few and find one you personally love. I know thats a bit of a cop out but its the best knife buying advice I can give.

I appreciate the recommendations guys . I did a quick search on Wusthof, since you guys both mentioned them, and they seem to be well known for having good quality knives. I'll definitely check out everything listed here.
