I doubt it would make it through the entire Earth due to the extreme heat and pressure. However, if such a knife could be produced to endure the pressure and heat of half the distance yet still deliver the same velocity into the iron core it should produce a pressure wave on the opposite side of the impact. Such a pressure wave would then cause significant disturbances in the Earth's magnetic field to a point of destabilization then we could just let the solar winds take care of the rest.
